16 fresh mussels (in half shell)
2 tablespoons olive oil
2 cloves of crushed garlic
1 tablespoon lemon juice
Salt and pepper to taste
Fresh chopped parsley, for serving
Production Phase and Process
- Heat the grill grate over medium heat.
- Rinse fresh mussels in half shell under cold running water and clean. Clean the mussels inside the shells without separating them.
- In a bowl, mix the olive oil, crushed garlic, lemon juice, salt and pepper.
- Spread a little of the olive oil mixture on each mussel.
- Place the mussels on the grill and grill with the shells on top.
- Grill the mussels for about 4-5 minutes or until the shells open. When the shells open, the mussels are ready.
- Sprinkle freshly chopped parsley on top after removing from the grill.
- Serve hot and garnish with lemon wedges if desired.

Note Make sure the mussels are fresh and healthy. Set aside the unopened mussels before cooking.
